We have to admit: The name “shortribs” is a bit misleading – because these tender ribs are by no means short! So where does the name come from?

The term short ribs has its origin in the flank of the beef - the "short plate", from which the ribs are cut out. In comparison to other types of ribs, short ribs have the advantage that the meat is not located exclusively on one side, but that the bones are completely surrounded by meat.
